At the luxury boutique hotel Pamelas, Lancashire-born Marco Pierre White alumni Tim Payne has designed a menu that’s as creative as it is delicious. Featuring inventive dishes such as wild sea bass with artichoke puree, wakame and mussels, and langoustine with bone marrow, Jerusalem artichoke, and sea plankton, it’s the kind of place where you can have a long, lazy supper while sipping cocktails under fairy lights and palm trees.
In the south of the island, you’ll find Ibiza Town (Vila d’Eivissa in Catalan), with its exquisitely preserved medieval old town, and the lively port area full of stylish restaurants and bars. Nearby, the spectacular Ses Salines National Park is home to pristine beaches and otherworldly salt flats and woodlands. There are also a number of otherworldly caves to explore and birdwatching is great in the area, too.
